Basic information

Sodium nitrite is a strong oxidizing agent with reducing properties. It gradually oxidizes in the air, and its surface turns into sodium nitrate. It can also be oxidized by oxidizing agents. It decomposes into brown nitrogen dioxide gas when exposed to weak acids. Contact with organic substances and reducing agents can cause explosion or combustion, and release toxic and irritating nitrogen oxide gas. It can also be oxidized by strong oxidants,especially ammonium salts. For instance,at room temperature,it can interact with ammonium nitrate,ammonium persulfate,etc.,generating high heat and causing combustibles to catch fire. It is mainly used for manufacturing azo dyes and can also be used as a mordant for fabric dyeing,a bleaching agent, and a metal heat treatment agent.

Application

1. Food preservative: It is used in cured meats like bacon, ham, and sausages to prevent the growth of Clostridium botulinum, the bacteria that causes botulism.

2. Color fixative: It helps maintain the characteristic pink or red color of processed meats by reacting with myoglobin.

3. Antioxidant in industrial applications: It is added to oils and greases to prevent oxidation and corrosion.

4. Corrosion inhibitor: Sodium nitrite is used in closed systems like cooling towers and antifreeze solutions to protect metal surfaces from rust.

5. Intermediate in chemical synthesis: It is used to produce diazonium salts, which are precursors for azo dyes and other organic compounds.

6. Medical treatment for cyanide poisoning: In higher doses, it is administered (along with sodium thiosulfate) to treat cyanide toxicity by inducing methemoglobin formation.
